A student of cheesemaker David Asher's, Roberta will teach us cheesemaking in the traditional way. We will learn to use our own cultures rather than store bought and will even discuss how to make homemade rennet. This class will focus on Mozzarella, Cheddar, Whey Ricotta, Cultured Butter and yogurt. We will conclude by discussing proper aging techniques.
